What is everyone's thoughts on sitemaps?

I was reading a thread in the subreddit \SEO, and there were about ten different people saying that sitemaps are only necessary for large sites or sites that do not display all the pages somewhere in the menu. Am I wasting my time creating a sitemap and an image sitemap? I assumed it was important to help Google understand the structure of your site.
